Cherry Chocolate Chip Cookies

“Kiki” is one of our most prolific pastry chefs. Recipes from her family’s village in Greece fill the pages of the “Philoptochos Cook Book (available for purchase in their booth).

But Kiki’s own cherry twist on the classic cookie was so well received it’s become a regular offering at our festival.

½ cup sugar
¼ cup firmly packed brown sugar
1 egg
1 tsp vanilla
½ cup soft butter flavored Crisco
1 cup + 2 Tbsp flour
½ tsp baking soda
¼ tsp salt
½ cup chopped nuts
1 cup chocolate chips
½ - ⅔ cup dried cherries

Cream together sugar, brown sugar, egg, vanilla and Crisco.
Add flour, baking soda, salt and blend the batter until smooth (about 1 minute).
Mix in nuts, chocolate chips and cherries.
Drop by teaspoonful onto a greased cookie sheet.
Roll them into a ball before placing them on the sheet pan.
Place a small piece of dried cherry on top of the unbaked cookie.
Place them 2 inches apart on the baking pan.
Bake at 375° for 10-12 minutes.
Yield 3 dozen cookies.
